Sea Salt Dark Chocolate Covered Frozen Bananas

INGREDIENTS

1-2 Bananas (ripe, yellow with minimal browning)

One Bar of Dark Chocolate (70% or higher)

1 tsp Coconut Oil

Coarse Sea Salt

INSTRUCTIONS

Serving size: 10-20 Frozen Banana Bites

  1. On a cutting board, slice bananas about ¼ – ½ inch thick. Place banana slices on a cookie sheet lined with parchment paper or a non-stick silicone liner.
  2. Freeze banana slices for 1 hour. Remove your frozen bananas from the cookie sheet and place them in a freezer safe container. (Set the cookie sheet aside, as you’ll need it again in step #4.) Keep bananas frozen until right before you are ready to dip them in the chocolate (bananas thaw fairly quickly)
    • NOTE: If the banana slices are not coming off of the cookie sheet cleanly, they may not be frozen all the way. Use your best judgement for freezing longer.
    • We recommend setting a timer, as they will dry out if frozen for too long.
  3. After preparing the frozen bananas, begin melting chocolate in a double boiler or the microwave. Melting chocolate can be an art-form, but don’t be intimidated! My simple microwave method:
    • Place dark chocolate, broken up into small pieces, and coconut oil into a microwave safe bowl. Coconut oil is optional, but will help thin your chocolate, making it easier to dip the frozen bananas. You can also use cacao butter or regular butter.
    • Microwave in 15-30 second increments, stirring in between, until chocolate is completely melted. Depending on the amount of chocolate, this usually takes about 1-2 minutes. Be careful not to overcook your chocolate; keep a close eye on it!
  4. Dip each frozen banana in the melted chocolate using a toothpick or spoon, and then place back on the cookie sheet. After dipping each banana, quickly sprinkle with your desired amount of sea salt to ensure it will stick.
    • PRO TIP: Make these with a partner, as you’ll need to work fast to sprinkle the sea salt on before the chocolate hardens. While one of you dips the bananas in the chocolate, the other can be sprinkling the sea salt. The frozen bananas speed up the process for hardening the chocolate.
  5. Freeze for 15-30 minutes, or until chocolate is completely frozen.
  6. Store in the freezer in a freezer safe container.
